Whole family is included in olive picking on Olea Dalma estate. On the same day they are picked, the olives are transported into oil factory and processed immediately. Depending on breed, it takes 5-10kg of freshly picked olives for one litre of olive oil.
Before the extraction of oil starts, olives are cleaned by automatic suctioning machines, separated from remaining leaves and impurity; it is followed by water washing in order to remove plant remains and mineral impurities. Afterwards, olives are ready for more demanding procedures that have been repeating almost unchanged for centuries. Fruit milling and paste kneading are the two procedures that follow each other and result in making olive paste that is subjected to extraction. The liquid part is separated from the firm mass by centrifugation and, depending on the ripeness of olives; it results in yellow-green olive oil. Particles, present in olive oil will in time sediment at bottom. Therefore, it is necessary to keep olive oil in inox containers for a few weeks and fill and sell afterwards.
